Add human-readable stdout logging stream

This has two advantages:

1. allows for logging JSON to a file on the server while logging
human-readable output to an external service (PaperTrail)

2. allows for viewing logs while running locally without having to open
a second terminal window (output will print in the terminal that the
server is running in)
