This fixes bad logic in the original design of the API,
and finally allows the use of .set in the presence of circular model
references.

Breaking change:
- Before this change, `.set()` would always assume that createRelations
  is true, even if the model was constructed with createRelations=false.
- After this change, `createRelations` is inherit from the constructor,
  with the possibility to override it in the options of the `.set` method.
