Fixing the UserManagerProxy service declaration (#819)

The UserManagerProxy should not try to manage Sonata\UserBundle\Entity\User which is a non existing class for most of the projects.

Declaration was changed to use %fos_user.model.user.class% instead of Sonata\UserBundle\Entity\User

fixes sonata-project/SonataUserBundle#818 : "bad UserManagerProxy declaration ?"
