fix(e2e): allow Legacy probes on Modern MCP test fixture

ToolHive still health-checks remote streamable-HTTP servers with a Legacy
client during workload startup. Keep the SDK v2 Modern backend while
accepting Legacy so the workload reaches Running before Studio negotiates
Modern through the proxy.
