fix(docs): use css-variables for hosted ft syntax highlighting

Hosted Mintlify only embeds custom Shiki grammars when codeblocks use the
css-variables theme. The github-light-default/dark-plus pair still highlighted
go/typescript but left ft fences falling back to plain text on deploy.
