Add edge case tests and fix fish \X escape bug

Fix: fish single-quote backslash escaping now only treats \' and \ as
escapes. Other \X sequences (e.g. $) are emitted as literal \ + X,
matching fish's documented behavior. Previously the state machine
consumed \ + any next char and emitted just the char.

Add 51 edge case tests covering:
- bash: close-quote-escape-reopen ('\''), escaped space, \n in double
  quotes, adjacent quoted segments, single-quote literal, @ wordbreak
  prefix quirk, escape at EOF, comment handling
- zsh: double-quote escape, RC_QUOTES with longer string
- fish: $ not escape in single quotes, escaped space, parens not wordbreak
- elvish: doubled-quote split, double-quote value, & not list operator,
  pipe, semicolon, open single quote
- nushell: interpolated double ($"), semicolon, open single/double quote
- powershell: doubled single-quote split, backtick escape outside/inside
  double quotes, pipe, semicolon, &&, open single/double quote
- xonsh: raw double-quoted string, &&, ||, semicolon, open single quote
- tcsh: single-quote literal, backtick literal in single quotes, escaped
  double quote outside, &&, ||, semicolon, &, open single quote
- oil: single quote, pipe, semicolon, &&
- cmd: ||, redirect detection, open double quote, caret at EOF

Total: 109 test cases, all passing.
