feat(typing): typable predictable shape for to_dict(enforce_list=True)

Make MatchesDict generic over its value type and overload to_dict so to_dict(enforce_list=True) returns MatchesDict[list[Any]] (predictable, typable), other modes MatchesDict[Any]. Default behaviour unchanged (guessit relies on it); removes the MatchesDict type: ignore[type-arg]; README points to Key/to() for typed access. Closes #59
