feat(typing): formatter-based Key for non-scalar values

Add an optional Key.formatter ((str) -> T) defaulting to value_type, so a
key can carry a custom converter for values not built straight from a
string, e.g. Key("released", date, formatter=date.fromisoformat). Exposed
via Key.converter and wired through the builder. Fully typed (matches[key]
-> T | None). Documented in the README and the v5 design doc.
