test: integrate phpcov, fix functional test deprecations, remove dead ext_tables.php

- Remove ext_tables.php (dead code: only ran on TYPO3 14.0-14.1, outside supported range)
- Migrate phpunit.functional.xml schema to remove PHPUnit configuration deprecation
- Add ignoreIndirectDeprecations to suppress ext_emconf.php framework deprecation
- Restructure coverage output to .cov binary files for phpcov merge workflow
- Add test:coverage:unit/functional/merge composer scripts with phpcov integration
- Add typo3/testing-framework to require-dev
