editor: Guard source line mode switches

`editorLineMode` is produced by private code in `app/editor`.
If a future mode is added without a matching `SourceCommand` arm,
continuing with a partially built command would hide an internal bug.

Panic on unrecognized modes so the failure points at the missing switch arm
instead of launching an editor command without the source path.
