docs: fix invalid TypeScript syntax in PLUGIN_API.md plugin example

The fn property was written as a type expression `(dataArray: OHLC[]) => number[]`
instead of a function value, and OHLC was not imported. Both would cause compile
errors for TypeScript users copying the example.
