feat(openalex-builder): head-size analyzer, corpus workload generator, head-boundary transcode

-analyze-head sweeps candidate head boundaries against a query workload (slow-mobile latency model); -gen-workload samples titles/subjects/authors/venues from the corpus; -transcode re-splits a finished .rrs/.rrf at a new boundary (and migrates v1->v2). split_posting/write_index/merge calls thread the boundary.
