feat(working-patterns): add Working Patterns and Allocations CRUD (#104)

* feat(working-patterns): add Working Patterns CRUD

Adds Humaans.WorkingPatterns covering /api/working-patterns. Working
patterns are company-scoped schedule definitions referenced from
working pattern allocations.

* feat(working-pattern-allocations): add Working Pattern Allocations CRUD

Adds Humaans.WorkingPatternAllocations covering
/api/working-pattern-allocations. Allocations link a person to a
working pattern within a date window.

* docs(working-patterns): expose Working Patterns resources via helpers and README

* test(working-patterns): assert headers and full struct mapping

Add Accept header assertions to all mock expectations and assert
company_id, created_at, and updated_at (with datetime parsing) on
working pattern responses. Also assert updated_at in the
working-pattern-allocations list test for complete timestamp coverage.

* test(humaans): smoke-test working pattern helper accessors

Cover Humaans.working_patterns/0 and Humaans.working_pattern_allocations/0
alongside the existing resource accessor tests.
