docs(sales): tighten get_metrics query-parameter types

Every value the Deputy `/api/v2/metrics/raw` endpoint accepts must be a
serialised string — sending a JSON number for `start`/`end` is
rejected. The previous doc described `start`/`end` as "Unix
timestamps" without specifying the expected wire type, and the typespec
accepted any `map()`.

Annotate each query parameter with its `String.t()` requirement and
narrow the spec to `%{optional(atom() | String.t()) => String.t()}`
(or a keyword list of the same shape).
