coverage: exclude src/test from lcov report (#344)

The existing `--include "*/<repo>/src/*"` already keeps external/ and
build-tree generated files out of the report, but it still folds
src/test/* into the library coverage and inflates the denominator. Add
`--exclude "*/<repo>/src/test/*"` so coveralls reports library-only
coverage.

Note: coveralls' PR check appears not to be reporting on PRs at the
moment (the action runs and submits, but the badge / PR comment is
absent). This change does not address that; it just makes the
submitted lcov data correct for whenever the integration is restored.

Closes #344.
