chore: group AI SDK packages into a single Renovate PR

The Vercel AI SDK (@ai-sdk/*), OpenRouter providers (@openrouter/*),
MCP SDK packages (@modelcontextprotocol/*) and the ai/ai-sdk-ollama
runtimes are tightly coupled — versions need to move together to
stay coherent. Renovate was opening one PR per package, which made
each bump look safe individually but risked landing incompatible
combinations on main.

Group them under "ai stack" so a single PR carries the whole
13-package bundle.
