bench: trim log_event_make_bench to copy + kv only for portability

Removes drop_fields scenarios and the parse_copy_fields_config call so
the bench can run unmodified on commits before drop_fields and
parse_copy_fields_config exist (i.e., before this branch's perf and
feature commits). Lets the bench commit slide into history before the
optimizations it's intended to measure across.

copy_fields is configured via the raw config string only; on commits
without the parsed virtual it falls through to inline parsing on every
event, on commits with the parsed virtual it falls through to the
unparsed-fallback clause that parses on every event. Both cases reflect
the actual production behavior at the corresponding point in history.
