Add Ouranos logo and acknowledgement (#283)

### What kind of change does this PR introduce?

* Adds an acknowledgement statement about Ouranos to the `README.rst`
and the rendered documentation.
* Adds the Ouranos logo with light/dark theme support for `furo`.
* Adds an `intersphinx` mapping for `xarray` objects in the
documentation.

### Does this PR introduce a breaking change?

No.

### Other information:

The Ouranos logo is linked to the organization `.github` repo, so if the
logos ever change there, they will be updated automatically.
