Align REGISTRY.md with configYAML-only MCPRegistry spec (#5088)

The v1beta1 MCPRegistrySpec exposes only configYAML, volumes,
volumeMounts, pgpassSecretRef, displayName, and podTemplateSpec
since #4705. REGISTRY.md was still documenting the typed
sources[] / git / configMapRef / api / filter / syncPolicy fields
directly under spec, which no longer exist on the CRD.

- Rewrite Quick Start to use a minimal Kubernetes source via
  configYAML.
- Add a Spec Reference table covering the actual CRD fields and
  a brief description of what lives inside configYAML.
- Restructure Data Sources into Kubernetes / ConfigMap+file /
  Git / API subsections, each with a configYAML example. Move
  Git private-repo auth onto passwordFile + volumes/volumeMounts.
- Add a PostgreSQL Authentication section covering pgpassSecretRef.
- Update Filtering, Sync Operations, and Secret Management to
  reflect the configYAML path.
- Replace the four legacy Examples blocks with a table linking
  to the canonical examples in examples/operator/mcp-registries/,
  and fix the See Also link to the renamed git-auth example.
