Broaden exception catch in http_request_middleware finally block

The logging code inside the finally block was only catching ValueError.
Any other exception raised during logging (e.g. from HttpRequestLog
construction or model_dump) would replace the original exception from
call_next, masking the real error. Broadening to Exception ensures the
finally block never interferes with exception propagation.
