refactor: enhance derived key caching with TTL and update related tests

- Introduced a maximum age for derived keys in the encryption utility to ensure stale entries are removed.
- Updated the caching mechanism to store both the key and its creation timestamp.
- Added a test to verify that keys are re-derived after expiration.
- Improved comments for clarity in the Redis cache service and Zerion portfolio API.
