doc: close gaps found by Nanodash extraction-set audit

Three small adjustments after walking through Nanodash's Space-related
domain code (Space.java, AbstractResourceWithProfile.java,
ViewDisplay.java):

- Expand the validated-view-display extraction list to include the
  fields ViewDisplay actually parses: title, gen:isDisplayOfView link,
  deactivation marker, presentation hints (page size, display width,
  structural position).
- Note in Phase 4 that the isAdminPubkey gate goes away (results are
  pre-validated) and that "is the current user an admin?" UI checks
  resolve via a small trust → spaces lookup, no SERVICE needed.
- Add an Open/deferred bullet for assignment timestamps / grant-chain
  history (Nanodash doesn't surface them today).

Pubkey-gate concern that the audit flagged is non-substantive under
the new model — materialization filters at write time so consumers
don't need to filter at read time.
