tests/test_main: stub resolved executables in git do_main tests

GitHub Actions runners do not provide ebuild or pkgdev on PATH; tests
that exercised the post-update git block resolved tools before sp.run
mocks applied. Patch _resolved_executable in those tests so CI does not
depend on Gentoo tooling.
