fix: mark catppuccin-latte as bundled, deduplicate atomicWriteFile, fix docs

- Add `# bundled: true` to catppuccin-latte so BundledNames() returns 7
  and --init-themes installs it, matching README/docs claim of seven bundled
- Extract duplicated atomicWriteFile into app/fsutil package, update
  app/theme and app/ui/configpatch to use shared fsutil.AtomicWriteFile
- Fix themes/README.md PR checklist: 18 required + 3 optional color keys
- Update test expectations for 7 bundled themes
