Commit Message

Fix CI: move MIX_ENV=prod from job-level to step-level env

The erlef/setup-beam action runs mix commands at the repository root,
but the root project has no config/prod.exs. Moving MIX_ENV=prod to
only the steps that run inside examples/release_demo avoids this.
