CI: fix Coveralls parallel upload race condition

All matrix jobs were uploading coverage independently, causing
Coveralls to auto-close the build after the first upload finished.
Remaining jobs then failed with "Can't add a job to a build that
is already closed."

Fix: use Coveralls parallel build support — each job uploads with
parallel: true, then a separate finish job sends the close webhook.
