docs: add EmbeddingOD documentation, clean up README and API reference

Add EmbeddingOD to all doc surfaces: README.rst, docs/index.rst,
docs/example.rst (full walkthrough), and API autodoc entries for
embedding.py and encoder modules.

Clean up README: compact Additional Resources to one line, replace
verbose Save/Load + SUOD + Thresholding sections with links, remove
ensemble table (ii), condense ADBench/ADGym citations. Shorten API
reference by removing :inherited-members: from all model entries.
Expand utility table with encoder functions. Fix install guidance
to be consistent across all files.
