fix: resolve race condition in TestSubscriptionChangefeed flaky test (#4735)

AllIteratorsConsumed returns true when the iterator's Next() returns
the last batch, but before OnDoc has finished processing it. Replace
the immediate assert.Equal with assert.EventuallyWithT to poll until
the cache matches the expected state.
