feat: add buildTarget support to AsyncValidatorMiddleware (#830)

Allow controllers to register an optional buildTarget function that
constructs the validation target from the full request (params, token,
body) instead of validating raw req.body only. This enables specs that
depend on route params or token-derived defaults to run in the
middleware rather than inline in the handler.
