fix(deps): update NuGet package versions in projects

This commit updates several NuGet dependencies to their latest patch versions across multiple project files to ensure improved stability and compatibility.

- Bump coverlet.collector and coverlet.msbuild from 8.0.0 to 8.0.1 in Archivist.OCR.Tests.csproj and Archivist.Tests.csproj
