readme: Fix GFZ doctest using test data files

Uses the packaged test data files to demonstrate the `gfz_daily()`
usage. The package automatically tries to download non-existent files,
so that for each test on a fresh git checkout, e.g. by github actions,
we were hitting the GFZ server for a download. Avoids that by using the
already packaged files for testing by overriding the "global" file path
variables for the GFZ file locations.
