* Add subscriber server metrics and update Grafana dashboards

- Introduced SubscriberStats struct to capture metrics for connected clients, active subscriptions, messages sent, and backpressure disconnects.
- Enhanced SubscriberServer to provide a snapshot of subscriber metrics.
- Updated MetricsServer to include subscriber stats in Prometheus output.
- Created a new Grafana dashboard for LOB Subscribers with relevant metrics visualizations.
- Modified existing LOB Ingest Pipeline dashboard to include links to the new Subscribers dashboard and updated descriptions for clarity.

- Adjusted Prometheus expression to prevent division by zero in Grafana dashboard.
