feat(demo): migrate todo collections to .collections/ shared-directory layout

Converts statuses, tags, and tasks to share demo-dbs/todo/ using the
new .collections/{name}/definition.yaml layout. Tasks converted from
per-record files to single tasks.json. Views moved to $views/
subdirectories. Removes old dedicated collection subdirectories.

Fix BuildViews to prefer col.Views (already loaded by validator) over
re-reading from disk, enabling both old and new layout support.
viewBuilderForCollection falls back to disk only when col.Views is nil.
