Fix almExamples following deprecation of defaultRuntime field

The default runtime in ClusterPolicy was marked as deprecated,
but is still required. Creating an instance of ClusterPolicy from
almExamples in this case will cause

```
spec.operator.defaultRuntime: Unsupported value: "": supported values:
"docker", "crio", "containerd"
```

This fixes the issue by making the field optional, removing validations.
