Fix mixed language labels and add missing translations for de/es/fr (#610)

- Translate language_en from "English" to native names (Englisch/Inglés/Anglais) in Android strings and shared YAML localization files
- Replace English loanword "Label" with German "Bezeichnung" in emotion pair hints
- Add ~200 missing Compose screen short-form string translations for German, Spanish, and French (these were falling back to English)
- Add missing select_category_prompt and sleep_distribution_graph_title translations
