* Use rolling 7/30-day windows for sleep weekly/monthly averages

The calendar-based ranges (Monday-today for weekly, 1st-today for monthly)
produced inconsistent and hard-to-use data, especially at the start of a
week or month when only 1 day of data would be available. Switching to
rolling windows ensures a consistent amount of data is always considered.
