Fix sleep tracking layout to enable scrolling for Maestro test (#503)

Replace flat ConstraintLayout with NestedScrollView wrapping a
LinearLayout so the entire fragment content (form inputs, stats cards,
and recent entries RecyclerView) is scrollable. This matches the
pattern used by fragment_medication_list.xml and
fragment_medication_log.xml. The RecyclerView now uses wrap_content
height with nestedScrollingEnabled=false so items render inline.

Fixes Maestro test 15 (crud_sleep_entry) which failed to scroll to
the "22:00" text in recent entries because the ConstraintLayout root
was not scrollable.
