Add reusable config profiles

Profiles bundle tool packages with their config volumes and env vars
into named reusable units (e.g., a "jira" profile bundles jira-cli,
~/.config/.jira/, and JIRA_API_TOKEN). Profile volumes are excluded
from --add-dir to prevent utility mounts from leaking into project
directory args.
