Add retry logic to Maestro coverage collection script (#443)

The 08_settings_sections test (and potentially others with heavy
scrolling) can leave the app's main thread busy when the coverage
broadcast arrives, causing the coverage file to not be written in time.

- Retry the broadcast + extraction up to 3 times with waits between
  attempts
- Check that the app process is still alive before each attempt (JaCoCo
  data is lost when the process dies)
- Increase post-broadcast sleep from 2s to 3s to give the receiver more
  time to write the file
