refactor: update chains v2 endpoints to accept service key as query parameter

- Changed the service key from a URL path parameter to a required query parameter for the v2 chains endpoints (`GET /v2/chains` and `GET /v2/chains/:chainId`).
- Updated related documentation, specifications, and integration tests to reflect this change.
- Introduced validation for the service key query parameter to ensure it is provided in requests.
