Remove unused MCPServerConfig struct (#3704)

MCPServerConfig was defined but never used in any code. The actual
struct used for MCP server entries in client config files is
MCPServer (in config_editor.go), which has additional URL field
variants (ServerUrl, HttpUrl, Uri) that MCPServerConfig lacked.

Also renames test functions that referenced the deleted struct
(TestUpsertMCPServerConfig → TestUpsertMCPServer,
TestRemoveMCPServerConfigNew → TestRemoveMCPServer).
