ci(e2e): pin Ollama to v0.15.4 (#301)

* ci(e2e): pin Ollama to v0.15.4

Pin the Ollama binary to a specific version instead of using the
install script which always fetches the latest release. This prevents
unexpected breakages from new Ollama versions.

Port of stacklok/toolhive-studio#1560.

binary. Extract the binary from the archive during installation.

Align with toolhive-studio approach: run Ollama via Docker container
pinned to v0.15.4 instead of downloading and extracting the binary.
This is simpler and avoids issues with changing archive formats.
