Fix Windows Unicode encoding error in E2E test runner

- Replace Unicode progress bar characters with ASCII (= and -)
- Replace Unicode checkmarks/symbols with text labels (PASS/FAIL/ERR/SKIP)
- Fixes UnicodeEncodeError on Windows with CP1252 encoding
- Tests now work cross-platform (Windows, macOS, Linux)
