fix: handle struct value correctly in DefaultStructMerge and FieldMerger.Update

When struct values are passed by value, modifying the copy through
reflection doesn't affect the original. This fix creates a new
zero-initialized struct and copies fields to it instead.

Also fixed durable_execution example to show final result when job is finished.
