Add edges module for edge-weighted percolation analysis

Implements a new edges module that enables percolation analysis with
explicit edge lists and optional weights. This allows finding percolation
thresholds by sweeping across weight values.

New functionality:
- Edge and EdgeData dataclasses for representing graph connectivity
- edges_from_structure() to generate edges from geometry
- edges_from_labels() for label-based edge weights
- graph_from_edges() to build graphs from edge lists
- JSON serialisation via load_edges() and save_edges()
- EdgeData.filter() for threshold-based edge filtering
