fix: avoid watcher deadlock

fix: on macOS, fsnotify can emit multiple events per op (e.g. Create+Chmod).
handleEvent held w.lock and then called onChange; in tests onChange sends
to a channel and can block on the extra event. While blocked it kept
w.lock held, and the test concurrently called RangeWatchedDirs (needs
w.lock), causing a deadlock.
Fix by unlocking before calling onChange.

fix: Recursive unwatch and make Close idempotent.
