fix: align EventOptions property names with fathom-client API

Update all tests, examples, and documentation to use the correct
EventOptions property names from the official fathom-client package:
- _value (monetary value in cents)
- _site_id (site ID override)

Previously used non-existent properties like 'id', 'value', 'section',
and 'category' which would be silently ignored by Fathom's actual API.
