🐛 (helm/v2-alpha): Fix chart renaming by templating all resource names

Resource names were hardcoded with the project name instead of using
the chart.name template, preventing charts from being renamed properly.

Changes:
- Template all resource names with {{ include "chart.name" . }}
- Template resource references (roleRef, subjects, serviceAccountName)
- Template cert-manager annotations and service DNS names
- Fix ServiceMonitor to use chart.name instead of hardcoded prefix
- Add E2E test validating chart works after renaming

The fix uses a generic regex pattern that matches any field ending in
'name' or 'Name', making it work for all resource types automatically.
