### What kind of change does this PR introduce?

* Add a conversion from `z` to `orog`, mainly for ERA5-Land.
* Fixed an issue where coordinates were not getting chunked correctly,
which sometimes crashed with Zarr. I've opted to remove chunks from
coordinates, instead of applying the chunks specified in `rechunk`. Any
opinion on this? Should we instead apply the chunks there too?
