Refactor tests to use concrete test models instead of overload mocks

- Replace Mockery overload mocks with concrete test model classes
- TestAuthScopableUser implements AuthScopable with scope tracking
- TestNonScopableUser for testing non-scopable behavior
- Avoids class loading conflicts with EloquentUserProvider inheritance
